Sous Vide Pickled Beets

Beets 175 g
Champagne vinegar 75 g
Water 50 g
Sugar 5 g
Salt

Beets
Trim and peel beet. Wearing gloves and working on parchment paper will minimize cleanup.

On thinnest mandoline setting, slice beets.

Combine remaining ingredients, and whisk until sugar and salt have dissolved.

Place beet slices in container, and cover with pickling liquid. Cover container, and let sit for at least 1 hour.

Strain beets to serve, or refrigerate in pickling liquid to store.
