French Onion Stuffed Mushrooms

French Onion Stuffed Mushrooms
4 tablespoons butter...
2 onions, thinly sliced
2 tablespoons beef broth
2 tablespoons chicken broth
1 teaspoon Worcestershire sauce
½ cup swiss, cheese, grated
24 wholes crimini mushrooms, washed with stems removed
fresh parsley, minced, for serving

In a large skillet, heat 2 tablespoons of butter on Medium
High heat. Add onions and sauté for 15–20 minutes,
stirring occasionally until very soft. Set onions aside.
In skillet, add broths, Worcestershire sauce and cook for
another 5 minutes, or until liquid is cooked down.
Melt another tablespoon of butter in a large skillet over
medium heat. Throw in mushrooms and toss around for
2 minutes, just to start the cooking process. Sprinkle
mushrooms with salt, as desired.
Place mushroom caps face up in a baking dish. Heap each
cap with sautéed onions, then sprinkle cheese over the
top. Bake at 10 minutes at 325 degrees. Turn on broiler
and broil for a couple of minutes, until the top of the
cheese starts to bubble and slightly brown.
Sprinkle minced parsley over the top and serve.
