Perfect Lamb with Pesto....Simply elegant and tasty!



Grilled Lamb Chops With Herb-Walnut Pesto  


Ingredients

Pesto
1 1/2 cups lightly packed fresh, basil, leaves
1 cup lightly packed fresh flat-leaf, parsley, leaves
1/2 cup lightly packed, fresh mint, leaves
3 tablespoons halves, toasted, walnuts
2 garlic cloves, chopped
3/4 cup extra-virgin, olive oil
2 teaspoons balsamic vinegar
Chops
8 lamb, loin chops, each about 1 inch thick
2 tablespoons extra-virgin, olive oil
salt and, black pepper


Directions
Pesto:
Combine the basil, parsley, mint, almonds, garlic and 1 tsp. salt in a food processor and process until coarsely chopped. Drizzle in the olive oil and puree to a thick consistency while processing. Scrape the pesto into a bowl and stir in the vinegar. Set aside.
Heat an indoor grill pan. Season the lamb chops on all sides with the 2 Tbs. olive oil, salt and pepper. Grill over medium-high to high heat until seared on the first side, about 3 minutes. Turn and grill on the second side for about 3 minutes longer for medium-rare. Transfer to a platter and let rest for 5 minutes.

My brother, Joe and I have birthdays that are one day apart.  He is the ultimate big brother.  He is one of the funniest people I know with a wicked sense of humor.  We rarely get to spend our birthdays together.  This last year, we got to spend the night with my mom.  We made these lamb chops. My only wish was to have more hours in the day that night as I havent laughed that hard in years!  Thanks to my mom and brother for a night to remember. To many more!
