Maple Roasted Squash
I large pumpkin, but can use any squash!! cut into 2 inch wedges.
1/3 cup of very good maple syrup
1/4 cup of very good olive oil
sea salt and fresh ground pepper
Preheat oven to 375 f and oil sheet pan. Place squash down on pan and brush squash with syrup, then salt and pepper. Roast for 15 min, turn over, repeat....then turn the oven down to 325 for another 30 mins. or tender with a fork. You can also mash them....wonderful on their own or with meats!
